Review:

The coffee just blows you away. It has a blood orange color to it which you rarely find in Indian coffees. This coffee has distinct notes of prunes, citrus and pepper. The roaster has mentioned notes of orange, spices, vanilla and prune. The coffee has a brilliant body and very well balanced. I can describe this coffee to be playing flutes of citrus and spices against a sweet background of prunes. The vanillin hits you in the aftertaste and the coffee finishes with a distinct smooth sweetness. This is coffee to live for. Almost unreal.


August update: Sourced a recent batch and found it to be missing a few characteristics observed earlier. There is a bit of bitterness which is taking over the sweet complexity. Need to give the coffee time to settle down. Starts performing pretty well after the 10th day of roast. There is still something a bit off compared to the last batch because of which the flavour balance has changed. Other aspec

20 gms coffee

250 ml water @92°C

Pour 60 ml water slowly in 10 seconds

Bloom for 30 seconds

Pour 180 ml water slowly and evenly in next 20 seconds

Swirl 4-5 times

Let it drip

Target brew time of 2 min 50 seconds Method: Cold Brew 100 gms coffee

1000 ml water

Brew for 24 hours at room temperature
