Review:

This is yet another brilliant coffee from Subko. The roaster mentions notes of Maple Syrup, Candied Pecans and Apricot. The tasting notes are quite easy to extract in the cup while parallels can be drawn to nuts and stone-fruit instead of the mentioned notes. It has a sweet balance and is medium bodied. The cup starts with a note fruity note of apricots and peaches, with a sweet balance running through the middle and finally ending with a almond-like finish. This is one coffee which is quite complex but easy to extract. Loved brewing every single cup.

Brew using water at 85 to 88°C to get a sweet balance

20 gms coffee

300 ml water @85°C

Pour 40 ml water slowly

Bloom for 35 seconds

Pour till the 150 ml mark

Swirl like a wine glass. Do not stir.

Pour till the 250 ml mark

Swirl like a wine glass. Do not stir.

Pour remaining water till you hit the 300 ml mark

Swirl gently

Let it drip

Target brew time of 3 min 30 seconds

Let the brew cool for 60 seconds
