Review:

This coffee blew my mind. The roaster mentions notes of Grapefruit Cordial, Blood Orange and Bubblegum, each of which can be easily extracted in the cup in spite of how the Ratnagiri is treated as a competition coffee. I was surprised when they sent me beans that were roasted 2 weeks ago. The coffee peaks around the 12-14th day and the balance is the flavour profile is beyond anything I've had in awhile. The cup starts smoothly with a note of grapefruit and is medium bodied. It has a great mouthfeel complimented by a syrupy citrus note. Finally, the cup leaves behind a lingering aftertaste of bubblegum and oranges. The brilliance of this coffee is its complexity yet the ease with which the flavours can be extracted. The flavour profile was intact well into the 4th week from roasting. An amazing coffee.

18 gms coffee

288 ml water @87°C

Pour 40 ml water slowly

Bloom for 40 seconds

Pour till the 150 ml mark

Swirl like a wine glass. Do not stir.

Pour till the 240 ml mark

Swirl like a wine glass. Do not stir.

Pour remaining water till you hit the 288 ml mark

Swirl gently

Let it drip

Target brew time of 3 min 30 seconds

Let the brew cool for 60 seconds
